All of the Ramen

Hello adoring fans!

It’s been awhile since I’ve updated this blog. It feels like forever ago when I made my post about delicious things I cooked. In the spirit of picking up from where I left off, I’d like to write about food again. Except this time, I’m going to talk about how delightfully poor I am this week and how that is influencing my dietary choices.

As mentioned previously, when I throw meals together, it is usually based on whatever I can find in my fridge. This semester, I’ve kinda neglected my grocery shopping, and in the aftermath of my trip to San Francisco, I’m not really in the position to restock my pantry. So I’m down to what I’ve got- so viele packages of ramen. I bought way too many about a month back, for a honey-ginger chicken stir fry recipe, as an alternative to rice.

Ramen has a reputation as THE staple of a poor college student diet. A friend of mine told me how her father, when at SDSU, would pretty much each nothing but ramen… but find ways to make it exciting. Since I’m currently in his shoes, that’s what I did! And am doing.

So, here’s what I did:

  • a splash of rice vinegar
  • a splash of sesame oil
  • a fistful of pine nuts
  • a fistful of shredded coconut
  • some ginger

It was fun, it was simple, and it was food. Hooray!
